Cooking with Us - e43 - Two Grilled Cheese Paninis

This time we have a treat for you!  Well, two treats, but one - in my humble opinion - just turned out way better than the other.  (Though I think I might try the first again.)

What did we make? 
First, we tackled a corned beef and cabbage grilled cheese sandwich using Irish cheddar that we 'panini'd' on the bbq pit.

Second, we successfully made a surprisingly delicious roasted carrot, pickle, and jalapeno grilled cheese with havarti.  This one was better also because after we 'panini'd' it on the pit, we popped it into the toaster to crunch-ify the bread.  I couldn't get over how good this was. And I think, when you try it, you'll have to agree!




I hope you guys try these, b/c while they were slightly time-consuming, 
they were also really fun to make, and uber-delectable.

Cooking With Us - e42 - Club Sandwich & Tamagoyaki

Last week we attempted remaking a club sandwich
similar to a fantastic one we had at Komptoir in Paris.

Ours weren't nearly the same,
but after tasting Theron's - I can say that his *was* fantastic!
I can also admit I have no idea how to make sandwiches!
(Which... you know... has actually been evidenced in prior blogs;)

Cooking With Us - e41 - Baked Peaches

Hi gang!
I know we didn't have a 4th of July update this year, 
but what's more American than baked peaches?
(Oh, Apple Pie? Well...)

Anyways ;) 
The other day, we made some pretty great baked peaches with our friend Leigh.
Grab a few, some marscapone, heavy cream, almonds, and honey - and get to baking!

Cooking With Us - e40 - Bánh Mì Spring Rolls

Another Monday - Another recipe that is sure to lift your spirits!

This time we jumped right in and made what I like to think of as Bánh mì Spring Rolls (or summer/fresh rolls if you prefer, as we didn't fry them).

We added lots of fresh veggies and fried strips of beef to make this delicious, light, and mostly-healthy dish!
Eat this as your dinner, or serve them as appetizers.
Either way, you won't be disappointed!

Cooking With Us - e39 - Ghetto Pasta Puttanesca


Ciao! Benvenuto!

This time on 'Cooking with Us' I had a request from my hubby, Theron, to make
pasta!  He was already on his way home from work when I started,
so I just worked with ingredients I found around the house.

What I wound up with was a rather good, simple puttanesca sauce,
moist chicken, and, well, pasta from a box!

Honestly, adding cheese didn't ruin it, it just made it creamier.
That's fine, but I prefer to let the ingredients speak for themselves.
